- Jeerakasamba rice - 1 cup
- Boiling water - 11/2 cup
- Onion - 1 small, chopped finely
- Tomato - 1/2
- Ginger - Garlic paste - 1 tblsp
- Green chillies - 2
- Cloves - 3
- Cardamom - 3
- Cinnamon - a small piece
- Coriander leaves - few
- Mint leaves -few
- Oil -2 tblsp
- Salt
- Ghee - 2 tbsp
- Fried Onions - 2 tblsp
- Fried Cashews - 2 tblsp
Method:
Heat oil in a pan, add the cardamom, cinnamon and cloves . Allow to splutter.
Add the sliced onion and saute till the onions becomes transparent.
Add the ginger-garlic paste and green chilies and saute for a few seconds.
Add the ginger-garlic paste and green chilies and saute for a few seconds.
Then add the tomatoes.
Add 1 1/2 cup of water ,coriander leaves , mint leaves and add salt to it.
Once the water boils,add the drained rice Reduce flame to low, place lid and cook till the rice is soft.
Remove lid and mix well. Remove onto a serving plate.Garnish with fried onions, cashew nuts and coriander leaves .
Serve with chicken or paneer curry or chicken ghee roast.
