Ingredients:
For Cooking Mutton :
- 750 gms lamb/ mutton
- 2 tsp kashmiri red chilli powder
- 1 tsp salt
- 1 tsp lime juice
- 1/2 tsp turmeric powder
- 1 tblsp oil
For Gravy:
- 1 bay leaves
- 1/2 stick cinnamon
- 2 cloves
- 2 cardamoms
- 2 onions sliced (medium to large size)
- 1 tomato chopped
- 1 tblsp ginger - garlic paste
- 1 green chilly
- 1 tblspn kashmiri red chilli powder
- 1 tbspn cracked black pepper
- 2 tblsp coriander powder
- 1 tsp garam masala powder
- 2 tblsp yogurt
- 2 tsp kasuri methi leaves crushed
- Coriander leaves - few
Procedure:
Normally for mutton karahi,the mutton is cooked in a deep pan. It's little bit time consuming process.So here I have first semi cooked the mutton in pressure cooker and then placed to the pan.
Heat oil in a pressure cooker and add the mutton pieces and fry for 5 to 10 min..
After 5 min,add red chilli powder,turmeric powder,lemon juice,salt with little amount of water. Cook for 3 to 4 whistles.
In a deep pan and add whole garam masala .
Add ginger-garlic paste and saute until raw smell goes off.
Then add onions and fry until onions change their color.
To this add the tomato pieces and green chillies.
Add coriander powder,red chilli powder,garam masala powder and salt.After sauting for a min, add a little amount of water.
Now add lamb pieces and yogurt to this.Add required amount of water and cook on low to medium heat.
Finally add black pepper,coriander leaves and kasuri methi leaves and cook for another 5 min.
Take it out in a dish and garnish with coriander leaves.Serve hot with naan bread or tandoori roti.
