Veg Pulao |
Ingredients:
- Basmati rice - 1 1/2 cups, wash and soak in water for 5 mts
- Carrot,Beans,Potato,Green peas (fresh) - 2 cup
- Cloves - 3
- Cinnamon stick - 1"
- Bay leaf - 1
- Onions - 1, large, finely sliced
- Green chilies - 2-3, slit
- Ginger garlic paste - 1 tblsp
- Pepper powder - 2 tsp
- Fennel Powder -2 tsp
- Garam masala powder - 2 tsp
- Coriander leaves - few
- Red chilli powder - 1 tsp
- Water - 3 cups
- Salt to taste
- Oil - 1/2 tbsp
- Ghee - 1/2 tbsp (vegans can avoid ghee and substitute with oil)
Method:
Soak the basmati rice for 20 minutes. You can do this with ordinary rice also but using basmati rice gives added flavor.
Cut the veggies into cubes.
Heat ghee and oil in a pressure cooker or cooking vessel. Once hot, add cloves, cinnamon and bay leaf, allow to sizzle.
Add sliced onions and green chilies and saute for 5 min till translucent.
Once the tomatoes are cooked well,add the vegetables and saute well.
To this add all the masalas and saute for a min .
Add 3 cup of water (for 1 cup rice add 2 cup of water) and bring to a boil. Reduce flame to low and place lid. Once the water comes to boil,add the rice.
Finally add coriander leaves and cook it for 2 whistles.
Do not over mix as the rice might break.remove lid, mix well and remove into a serving bowl.Serve hot with onion pachadi or any side dish of your choice.
