Ingredients :
- Digestive biscuits - 50 grams (1/2 cup)
- Butter, melted - 25 grams
- Cream cheese, room temperature - 50 grams
- China Grass(you can also use gelatin instead) - 5gm
- Mango puree - 1 cup
- Whipping cream - 75 gm
- Powdered sugar - 1 tblsp (for cream cheese mixture)
- Sugar - 2 tblsp (for china grass)
- Any ice cream (i used pista flavour) - 1 scoop
- Crushed almonds for garnishing
Method:
Put the biscuits in a food processor and pulse until they are finely ground.
Mix the cookie crumbs and melted butter until moist crumbs form.
Spoon some crumbs into the glass and press firmly with the back of a spoon or fingertips. Put the glasses in the refrigerator while the rest of the cheesecake is prepared.
Meanwhile, whip the cream
Mix the cream cheese with 1 tablespoon of powdered sugar and add it to the whipped cream, folding it in carefully.
Boil the agar agar in 1 cup of water and sugar..
Once it dissolves add the mango puree.
Then add half amount of it to the cream-cheese mixture.
Pour this mixture on the cookie crust, level it and put the glasses in the fridge to set for at least 1 hour.
Pour the remaining agar agar - mango mixture above the cheese cake filling.
Put the pista ice cream and crushed almonds on top of the cheesecake filling and keep in the fridge until it's time to serve.
