- Mushrooms (sliced ) – 250 gms
- Tomato - 2
- Onion (finely Chopped) – 1 medium
- Ginger-garlic paste - 1 tblsp
- Green Chillies (Slit) – 3 no or to taste
- Salt – to taste
- Fennel seeds-1 tsp
- Cinnamon - 1/2 stick
- Cardamom - 3
- Cloves - 2
- Coriander Powder – 2 tblsp
- Garam Masala Powder – 1 tsp
- Red Chilli Powder – 2 tsp or to taste
- Turmeric Powder – 1/4 tsp
- Oil – 3 Tbsp
- Coriander leaves (Chopped) – 2 Tblsp
- Lemon Juice – 1 tsp
For Seasoning:
- Butter – 1 Tbsp
- Curry leaves - few
- Garlic cloves crushed - 3
- Green chilies -1(crushed)
- Coriander leaves - few
- Pepper powder - 1tsp
Process:
In a pan heat the oil,add fennel seeds, cinnamon,cardamom,cloves. Then add green chillies and ginger- garlic paste.
To this add onions and once it turns golden brown,add the tomatoes and saute well.
Then add all the masalas like coriander powder,cumin powder,red chilly powder,turmeric powder and salt.
Once the raw smell of masalas goes off,add the mushrooms and saute for a min.
For Special Garlic and Herb Seasoning:
In a pan,add ghee ,garlic,curry leaves,green chillies,pepper powder,coriander leaves and salt.
Add this tadka on top of the simmering curry and check for seasoning.
Turn Off the heat and sprinkle some lemon juice and cilantro while serving.
Serve it hot with rotis or any other Indian flat bread
