Ingredients:
- Onion -1
- Tomato -1
- Capsicums -1
- Green chillies -2
- Vegetables(Carrots -2, Beans -4-5 nos, Green peas- 1 cup)
- Ginger-garlic paste-1 tblspn
- Red chilly powder - 1 tsp
- Turmeric powder-1/2 tsp
- Coriander powder -1 Tblsp
- Whole garam masalas(cloves,cinnamon,bay leaves) -1 tsp
- Kasoori Methi powder -1 tblsp
- Salt - as required
- Oil - to cook
For Grinding:
- Coriander seeds – 1 tblsp
- Red Chilies – 2
- Cardamom – 2 no
- Cloves – 2 no
- Bay leaves – 1
- Cinnamon – 1/2 stick
- Nutmeg – ½ piece
- Cumin seeds – 1/2 Tsp
- Black Pepper – 1 Tsp
Method:
Dry Roast all ingredients and make a coarse powder.
Heat oil in a kadai and add whole garam masalas,onion and slit green chillies .
Once the onion turns golden brown add ginger-garlic paste and tomato pieces and stir fry for 2 minutes.
Then add cut vegetables and all the powders and stir for 5 min.
After 5 min add kasuri methi powder and add little water.Let the vegetables cook.
Add dry fenugreek leaves (kasuri methi) in warm water and add to curry just before removing from fire.
