South Indian Beef Roast






Ingredients:

  • Beef - 1/2 kg
  • Onion - 2 large cut into thin slices
  • Tomato - 1 
  • Green Chillies 
  • Red Chilly Powder - 1 tblsp
  • Coriander powder - 1 tblsp
  • Fennel Powder - 2 tsp
  • Turmeric powder - 1/2 tsp
  • Pepper powder - 1 tsp
  • Salt
  • Oil

 For Grinding:

  • Ginger - 4 - 5 pieces
  • Garlic - 6 pieces
  • Cloves - 3
  • Cardamom - 2
  • Cinnamon - 1/2 stick
 



Method :

Grind the below ingredients into a paste.

  
Wash the beef thoroughly with rock salt and start marinating the beef with  1/2 tblsp of red chilli powder,1 tsp of turmeric powder and salt. Let it be there for about 10 to 15 min.


It's about 15 min. Now  cook the beef by adding little water to it.Pressure cook for 7 to 8 whisles.



 




Meanwhile heat oil in a pan and add the above ground ginger garlic paste to it. Sauté till the raw smell goes off. Add onion to this and saute till the onion becomes brown in color. 


Add chopped tomatoes and green chillies .Everything has mashed well.





 


 

Add in 1 tsp of pepper powder,coriander powder and pinch of salt if necessary.



Now add the cooked beef to this. Reduce the flame and cook until it become dry and nice aroma comes.(you can add little water too)


Finally sprinkle few coriander leaves to it.


Delicious Beef Roast is ready. Serve it with Roti, chappathi or aappam,

Mutton Dopiyaza



Mutton Dopiyaza/Gosht Dopiyaza/Mutton Dopiaza


Ingredients:
  • Mutton - 1/2 kg
  • Small onions, halved - 6
  • Onions, chopped - 2
  • Tomatoes, chopped - large
  • Green cardamom pods - 3
  • Cloves - 3
  • Cinnamon stick - 1/2
  • Dried red chilies - 3
  • Black peppercorns - 6
  • Ginger-garlic paste - 1 tblsp
  • Chili powder - tblspn 
  • Coriander powder - 1tblsn 
  • Cumin powder - 1/2 tspn 
  • Turmeric powder - 1/2 tspn 
  • Salt - 1/2 tspn 
  • Water - 1cup
  • Vegetable oil - tablespoons 



Method:

Heat 2 tablespoons oil and fry the small onions until tender and translucent.


Remove and keep aside.



Add the remaining oil  and saute the cinnamon, cardamom, cloves, chilies and peppercorns. 




When they crackle, add the chopped onions.



When the onion turns golden, add garlic and ginger paste and saute for 3 minutes.


Add the mutton and cook for 10 minutes.



Now the color of mutton has changed.



Add the tomatoes and green chillies and saute for 5 min.


Add the ground spices and salt and cook for 3 minutes.


Add required amount of water once the masalas oozes out oil. Cook until 5 whistles.



Add the reserved onion to the gravy cook for 5 min .



Finally add coriander leaves. 




Serve hot with naan, paratha or rice.

Ingredients:
  • Chicken  - ½ kg (cut into small pieces)
  • Mustard seeds - ½ tsp (optional)
  • Cumin seeds - 1/2 tsp
  • Whole garam masala (cinnamon ,cardamom stick small ,star 1)
  • Onion chopped - 1
  • Turmeric powder -  ½ tsp
  • Ginger and garlic paste - 1 tsp
  • Green chilli 1 slit
  • Curry leaves few
  • Tomato chopped 1
  • Red chilli powder - 1/2 tsp
  • Coriander powder - 2 tsp
  • Cumin powder -  ½ tsp
  • (Pepper corns - 8 and garlic - 2 )crushed together
  • Warm water -  ½ cup
  • Oil - 2 Tbsp
  • Salt to taste

In a vessel add oil ,then add mustard seeds when it starts crackle add cumin seeds and whole garam masala
 



Then add chopped onion fry till light brown.Then add green chilli,curry leaves and chopped tomatoes cook till soft


Then add turmeric powder,green chillies and ginger ,garlic paste mix well. 



Add chopped tomato to it.


Then add the washed chicken to it.



Then add red chilli powder , coriander powder and salt stir well till its raw smell go away. 

Then add ½ cup warm water and cook till chicken is completely done. 




Add crushed peppercorn and garlic and cover and cook for another 3 minutes.

 
Finally add the coriander leaves.


Serve the pepper chicken with roti,rice or aappam.
