Veg Pinwheels Recepie







Ingredients required :
For the dough:
  • All purpose flour- 1 cup
  • Salt - to taste
  • Oil - 2 tsp
  • Water - 1/2 cup
For the filling:
  • Boiled potato - 2
  • Fresh peas - 1/4 cup
  • Cumin seeds - 1 tsp
  • Turmeric powder - 1/4 tsp
  • Chilli powder -1/4 tsp
  • Salt - to taste
  • Coriander powder -1/4 tsp
  • Garam masala - 1/2 tsp
  • Oil - for frying

For the dipping batter:
  • Corn flour - 2 tbsp
  • Water- 1/4 cup

 





Method:

Boil the potatoes and peas and mash them very well.

In a mixing bowl, add all the ingredients for the dough and mix well. 


Slowly add in water and knead to a soft dough. Cover and set aside for 10 minutes.



In another mixing bowl,  mash the potatoes. Add in all the ingredients for the filling, mix well.




For the dipping batter, in a bowl add the corn flour and mix without lumps with the water. It should be a thin batter. Set aside.





Roll out the dough to a thin roti. Spread the filling on the roti evenly with your hand.Gently press the filling so it is even and layered.





Gently but tightly roll the dough and filling into a log.


At the end seal the edges with water.






Using the rolling pin, gently flat the rolled dough with filling. Chop it into pieces as shown in the picture.

Dip the discs in the batter 


Heat the oil in a heavy bottom pan on medium heat.Deep fry them till golden brown.
Drain the extra oil.Serve hot with ketchup.


Mushroom Buzule Recepie / Evening Snacks






INGREDIENTS:
  • Mushrooms -  1 cup
  • Corn flour -   2 tblsp
  • Rice flour - 2 tblsp
  • Green chillies(chopped) -   2 nos
  • Garam masala powder -  ¼ tsp
  • Pepper powder -  ¼ tsp
  • Ginger garlic paste - ½ tsp
  • Coriander leaves -  few crushed
  • Kashmiri Red chilly powder -   1 tblsp
  • Coriander powder  -  1 tsp
  • Lime juice -  ½ tblsp
  • Salt To taste




METHOD:

Clean the mushrooms and keep aside.

 
Take a bowl and to this add corn flour and  rice flour.



Add green chillies, ginger-garlic paste and chopped coriander leaves to it.


Now add garam masala, pepper powder, red chilly powder, coriander powder, lime juice, salt,water and mix nicely to make bajji batter.

 
The batter should be little thick for coating.
 



Coat mushrooms with this batter and deep fry in hot oil, later transfer into paper towel.


 
Now hot and crispy mushroom buzule is ready to serve.

 


RECEPIE SUMMARY:

  • METHOD:

    1. 1. Clean the mushrooms and keep aside.
    2. 2. Take a bowl and add corn flour, rice flour, green chillies, garam masala, pepper powder, ginger garlic paste, garlic, coriander leaves, red chilly powder, coriander powder, lime juice, salt,water and mix nicely to make bajji batter.

    Chicken Parcel





    Ingredients:
     
    For Cooking Chicken: 
    • Chicken - 1/4 kg
    • Salt- to taste
    • Chili powder-1/2 tsp
    • Turmeric powder -1/4 tsp
     For making filling:
    • Onion, chopped- 2
    • Green chili -2[crushed]
    • Ginger-garlic paste-1tbsp
    • Garam masala-1/2 tsp
    • Coriander powder - 1 tsp
    • Red Chilly Powder- 1 tsp
    • Samosa Pattis


     
    Instructions:
     
    Cook the chicken with all the above mentioned ingredients and mince the cooked chicken. Make the plain flour paste by mixing it with little water. Make sure that the paste is thick.
     
     
    In a pan add in ginger-garlic paste.Once the raw smell goes off,add in onion and green chillies.
     
    Add the rest of the ingredients one by one and finally the minced chicken, mix it well.

     
    Now add coriander leaves.Using this filling, start making small balls (around 1/2 inch balls).

     


    Take the samosa pattis, fold them in the centre and cut them into two bunches of thin stripes. Again, fold them into half and cut them.

     
    Take one thin strip and apply the plain flour paste at the centre of the patti.Take another strip and stick it on the 1st strip, making a plus (+) sign.


    Take a ball of the filling and place it on the strip. Flatten it slightly. Start folding the strip. Begin from the lower strip. On the last strip, apply the plain flour paste and stick it.If the corners are slightly open, apply the flour paste on the corners.

     
    Heat very little oil in a pan.Start frying the pattis immediately in medium hot oil.

     
    Once they turn golden brown in colour, get the chicken parcels off the flame on an absorbent paper.The delicious chicken parcels are ready to be served.

    Ghilafi Kabab / Mutton Mince Kabab





    Ingredents:
    • Mutton Mince - 1/4 kg (thinly chopped by machine)
    • Capsicum - 1 (very finely chopped)
    • Tomato - 1 (discard the seeds and finely cubed)
    • Bread - 1 sliced (soaked in water and squeezed)
    • Green chillies - 6 (finely chopped)
    • Oil -¼ cup
    • Onion - ½ cup (finely chopped)
    • Ginger 1 inch piece (finely chopped)
    • Garam masala powder - 1 tsp (leveled)
    • Salt - 1 tsp
    • Ginger garlic paste -1 tbsp (heaped)
    • Lemon juice - 1 tbsp
    • Cashew nuts paste - 1 tbsp


    Method:


    Mix the meat with all other ingredients including onion,tomato,capsicum,cashew paste,bread,etc. Keep aside for 2 hours.


    Divide the mixture into medium size kababs either lengthy, round or any shape u like. 



    Then fry kebabs in a small amount of oil in a shallow pre-heated pan.




    Serve the kababs with ketchup or your favourite chutneys.



    Note: can be use almond's paste instead of cashew nuts paste and fresh cream  instead of malai.
    You can make these kebabs with any kind of meat like chicken, beef or mutton.



    Homemade Chicken Roll



    Homemade Chicken Roll,chicken spring roll




    Ingredients:

    For Pancake:

    • All purpose flour – 1 cup.
    • Egg –  2 nos.
    • Cornflour - 2 tbsp.
    • Salt – to taste
    • Milk – 1 cup.
    • Water –  as needed. 

    For chicken masala:

    • Chicken – 1 cup.(cooked and shredded)
    • Onion – 1 cup chopped.
    • Ginger paste – 1 tsp.
    • Garlic paste – 1 tsp.
    • Green chili – 3 -  nos. finely chopped.
    • Turmeric powder – ½ tsp.
    • Pepper powder – ½ tsp.
    • Chilly powder – 1 ½ tsp.
    • Garam Masala powder – ½ tsp.
    • Coriander powder – 1 tsp.
    • Coriander Leaves finely chopped.
    • Coriander Leaves  - few
    • Salt to taste.
    • Oil for frying.

    For Coating:

    • Bread crumps – 1 cup.
    • Egg white - 2 eggs



    Method :

    For chicken fillings.

    Cook chicken by adding 1 /2 tsp pepper powder, 1 tsp chili powder, ¼ tsp of turmeric powder and enough salt.Shred it and keep it aside. 


    Heat oil in a pan. Add onion and saute it well until the onion becomes transparent.




    Add ginger, garlic, green chillies and some salt.


    Then add turmeric powder, chilly powder, pepper powder, coriander powder and garam masala powder. Saute a while.


    Add the cooked chicken to this. Sprinkle some coriander leaves, mix well and switch of the flame.


    The Filling is ready.




    For Pancake:
    Take all purpose flour in a large bowl. Add corn flour, enough amount of salt .



    Add the eggs to it.


    Mix well. Pour milk and needed amount of water to this, make it to a smooth and medium consistency batter.


     Heat a small non stick pan, pour one small ladle of batter to it and spread evenly in the pan to get circle shape. 

    Remove the pancake from the pan when it done.Prepare all the pancakes like this.





    For Assembling:

    Take a pancake, put 1 tbspn. of filling to it’s one corner. 


    Fold it, shape it like rolls....as shown in the picture....


    Prepare all the rolls in the same way.


    Dip each roll first in egg white and then in bread crumbs.



    Finally deep fry the rolls in oil..Serve the chicken roll with ketchup.
