South Indian Beef Roast






Ingredients:

  • Beef - 1/2 kg
  • Onion - 2 large cut into thin slices
  • Tomato - 1 
  • Green Chillies 
  • Red Chilly Powder - 1 tblsp
  • Coriander powder - 1 tblsp
  • Fennel Powder - 2 tsp
  • Turmeric powder - 1/2 tsp
  • Pepper powder - 1 tsp
  • Salt
  • Oil

 For Grinding:

  • Ginger - 4 - 5 pieces
  • Garlic - 6 pieces
  • Cloves - 3
  • Cardamom - 2
  • Cinnamon - 1/2 stick
 



Method :

Grind the below ingredients into a paste.

  
Wash the beef thoroughly with rock salt and start marinating the beef with  1/2 tblsp of red chilli powder,1 tsp of turmeric powder and salt. Let it be there for about 10 to 15 min.


It's about 15 min. Now  cook the beef by adding little water to it.Pressure cook for 7 to 8 whisles.



 




Meanwhile heat oil in a pan and add the above ground ginger garlic paste to it. Sauté till the raw smell goes off. Add onion to this and saute till the onion becomes brown in color. 


Add chopped tomatoes and green chillies .Everything has mashed well.





 


 

Add in 1 tsp of pepper powder,coriander powder and pinch of salt if necessary.



Now add the cooked beef to this. Reduce the flame and cook until it become dry and nice aroma comes.(you can add little water too)


Finally sprinkle few coriander leaves to it.


Delicious Beef Roast is ready. Serve it with Roti, chappathi or aappam,

Cucumber Pachadi / Vellarikkai Pachadi



 



Ingredients
  • Cucumber -  3 to 5
  • Grated coconut  - ¼ cup
  • Cumin seeds - 1 tsp
  • Green chilly - 1 to 2
  • Thick yoghurt / curd  - 1 cup
  • Oil   - ½ tsp
  • Mustard seeds   - ¼ tsp
  • Cumin seeds  - ¼ tsp
  • Split urad dal  - ½ tsp
  • Hing / asafetida - a pinch
  • Fresh coriander leaves
  • Salt to taste




Method:

     Wash and peel the skin of cucumber.Cook it covered for 4 to 5 mins in low flame.Take grated coconut, cumin seeds and chillies.

 
 



Once the veg is cooked, add the paste, salt and mix well.Cook for another few minutes.
Turn off flame and let it cool.Add yoghurt to the cooked cucumber spice mix.


  Heat oil in a small pan.Add mustard seeds, cumin, split urad dal, hing, curry leaves and wait to crackle. Now add this seasoning into cucumber pachadi.

•Split urad dal  - ½ tsp

Bitter Gourd Pulikari / Pavakkai Pulikari



Ingredients:

  • Chopped bitter gourd -2 cup
  • Tamarind pulp - 1 lemon size
  • Citron / Narthangai Pickle - a piece(or you can use whole narthangai)
  • Sliced onion-1 large
  • Chopped tomatoes-1
  • Green chilli -1
  • Mustard seeds-1tsp
  • Cumin seeds-1tsp
  • Fenugreek seeds-1 tsp
  • Dry red chilli - 2
  • Curry Leaves-2tbsp
  • Turmeric powder -1/4 tsp
  • Red chilli powder - 1 tsp
  • Fennel powder-2 tsp
  • salt to taste.
  • Oil-1 tblsp




Method:

Boil the chopped bitter guard with little salt. Cool it and squeeze the excess water. This reduces the bitterness slightly.
 

Heat oil in a pan and add cumin seeds, mustard seeds, fenugreek seeds, curry leaves, dry red chillies.



 

Add chopped onion, green chillies and tomatoes.

 
Then add the boiled bitter guard to it.
 

Add red chilli powder, turmeric powder, fennel powder and salt.




Soak the tamarind in water and add the pulp to the gravy. You can adjust the tamarind water according to your taste.
 




Finally add a little piece of citron pickle to it.
 

Serve hot with rice.
 


 

Varutharacha Sambar




Ingredients:

For Sambar Masala:

  • Dry Red Chillies - 5 to 6
  • Coriander Seeds / Mullu Malli - 5 tblspn
  • Chana Dal / Kadalai Paruppu - 2 tblspn
  • Urad Dal / Uludu Paruppu - 2 tblspn
  • Cumin Seeds  - 1.5 tsp
  • Fenugreek Seeds / Vendayam - 1 tsp
  • Coconut - 4 tblspn grated
  • Oil - 1 tsp

Vegetables for Sambar:
  • Carrot - 1 cubed
  • Ladysfinger - 4 chopped
  • Potato - 1 cubed
  • Drumstick - 1 cup cubed
  • Cucumber - 1 cup cubed
  • Brinjal - 3 small cubed
  • String Beans - 6 chopped
  • Beans - 5 chopped

For Seasoning:
  • Oil / Ghee - 2 tblspn
  • Mustard Seeds  - 1 tsp
  • Urad dal - 1 tsp
  • Cumin Seeds - 1 tsp
  • Dry Red Chilli - 2
  • Curry Leaves - a handful
  • Hing/Asafoetida - 1 tsp
 


Method:

First cook dal, by taking all the ingredients given for cooking dal in a pressure cooker for 3 whistle, simmer the cooker for 5 mins. turn off the heat and let the steam go all by itself. Open the cooker and mash up the dal. Set aside.
 

Preparing sambar masala:

Heat 1 tsp oil in a pan and add in all the sambar masala ingredients. Roast on a low heat till it gets golden.
 


 
Remove this to a blender and add little water at a time and make it into a fine paste. Set aside.
 

Making Sambar:

Wash the vegetables and cut them into medium sizes.


 

Take a big pot. Heat 2 tblspn of oil. Once it is hot, add in onions, shallots, green chillies, tomatoes and curry leaves. Saute for a couple of mins.
 



Add in all the veggies along with salt and turmeric powder. Mix that well for 5 min or so. So there is no raw smell. 
 


Now add the grounded paste along with little water and cover the pot and cook for 10 mins till the veggies are tender.
 

Add in jaggery and tamarind pulp.
 

Now add the cooked dal to it.Mix well and taste the sambar adjust the seasoning. simmer the pot for 10 to 15 mins.



Now make seasoning by heating oil or ghee and frying all the ingredients listed. 
 
 


Pour this over the sambar and mix well.




Add in lots of chopped coriander leaves and mix well. Tasty Sambar is ready. Serve hot with rice.
