Whipped Cream Topping Using China Grass





Ingredients:

  • Full cream milk - 1 1/2 cup
  • Agar Agar / Chinagrass (powdered)- 4 tsp
  • Water -1/2 cup(for melting agar agar)
  • Vanilla Essence - 1 tsp
  • Powdered Sugar - 1/2 cup




Method:
 
Keep your mixing bowl and beater hook in freezer for around 1 hour. Take 1/2 cup of water in a pan and  to this add 4 tsp of agar agar and mix well..




Heat on a low flame till it gets dissolved and once it comes to boil switch off the stove..Add in 1 tsp of vanila essence to it and mix well.


 
Now put the milk-agar agar mixture in freezer for about an hour so that it can set and thicken.(dont forget to give a quick stir every 15 min).Its about 15 min. Give a stir and place it back to the freezer.

 
After an hour take the bowl from the freezer and beat with an hand beater.Continue beating till it gets thick and forms stiff peaks.Add in powdered sugar little by little.


Beat well till it is creamy.Refrigerate until use.
 
 
Notes
  • You can add gelatin instead of agar agar as well.
  • Mix the milk-agar agar mixture every 15 min.
  • Make sure the cream, bowl and the beater which you use has to be cold. 
 

Strawberry Panna Cotta




Ingredients:
  • Strawberries - 1 cup(cut into pieces)
  • Agar agar(China grass) - 4 tblsp
  • Water - 1/2 cup(for dissolving agar agar)
  • Cream  - 1/2 cup
  • Milk - 1 cup
  • Sugar - 1/4 cup
  • Vanilla extract - 1 tsp



Method:

Cut the strawberries into pieces and grind them into a smooth paste.



Now the strawberry purée is ready.


Take milk in a bowl and to this add 1/2 cup of cream.



Add in 3 tblsp of sugar and mix well.



Keep it on stove and heat this milk - cream mixture.



Once  it comes to boil switch off the stove.





Meanwhile cook the agar agar along with water.


Once it dissolves completely switch off the stove .

Add the melted agar agar to the above milk-cream mixture.


Now Add the strawberry purée and mix well.



Finally add 1/2 tsp of vanilla extract ,stir well.



Pour it in to the serving bowl and refrigerate until set.


 Once it sets demould it carefully. Yummy panna cotta is ready to serve.


Broken Glass Jelly Pudding



 
Broken Glass Jelly/Agar Agar Pudding


Ingredients:

  • Jelly mix 1/2 packet(use 3 colors)( i used strawberry,lemon, orange,and coffee)
  • China grass 5 gm
  • Milk 1 cup
  • Condensed milk ½ can
  • Water 3 cup 
  • Sugar - 3 tblsp
  • Cardamom crushed - 2




Method:

In a bowl prepare strawberry flavour gelatin as per the instructions.


And pour it in square or rectangular shape dish and refrigerate until firm.


Same way make other 3 flavour gelatin (jelly mix ).After the jelly is set completely unmold it and cut into small cubes



In another bowl add 10 gm china grass and add water and boil it.


Boil milk with crushed cardamom and sugar.




Add condensed milk to it.


Once boiled pour it into a the melted china grass. Transfer it into a tray and allow it to cool. .Just cooling not to get firm.Stir it continuously.





Add the jelly cubes to it. Stir very gently if necessary to evenly distribute jelly cubes. Refrigerate for 2 hours or till until firm.
 

Flip over to a pate.

Cut it into squares and serve chilled.
