Basbousa - Arabic Semolina Cake

YBasbousa - Arabic Semolina Cake


  • Coarse Semolina - 2 cup
  • Dessicated coconut - 1 cup(powdered dried coconut)
  • Powdered sugar - 1 cup
  • Self-raising flour - 1 cup
  • Thick yoghurt - 4 tbsp
  • Unsalted butter, melted -200g
  • Vanilla extract-1tsp
  • Almonds -5-6
  • Milk - 1/4 cup

  • Sugar - 1 cup
  • Water-1 cup
  • Lemon juice-1 tsp
  • Rosewater-1tsp or few drops of rose essense


Preheat oven to 190 deg celcius. Lightly grease the baking dish with butter. Remove the skin of almonds by boiling it in water. 

Cream together butter,yoghurt,
vanilla essence and sugar in a mixing bowl. 

In a separate bowl, combine semolina,flour, baking powder, dessicated coconut and baking soda

Slowly add the butter and sugar mixture. 

Add little milk to it. 

Pour mixture into baking dish and refrigerate for 1 hr. 

After an hr,with a butter knife and make square lines from left to right and complete to make square shapes. Place an almond in the center of each square. 

Bake for 40 min at 190 degree. 

Dissolve sugar in water in a medium saucepan. Add lemon juice and bring to a boil. 

Once the syrup begins to boil, add in rose water. 

Remove from heat and set aside. 

Remove cake from oven.

Pour syrup over cake until no more can be absorbed. Allow to cool for 20 minutes.

Delicious Basbousa is ready to serve.
