Irachi Pathiri / Chicken Pathiri



 Irachi Pathiri


Ingredients:

For the Pathiris:
 
  • All purpose flour – 1 ½ cup.
  • Salt – to taste.
  • Oil – 2 tbsp.
  • Lukewarm water.
 
For the filling:
  •  Chicken / Beef – 250 gms.
  • Onion – 2 nos. big (chopped)
  • Ginger -garlic paste – 1 tblsp
  • Green chilis – 2 nos.
  • Curry leaves – few (chopped)
  • Coriander leaves – few sprigs (chopped)
  • Salt.
  • Oil – 2 tbsp.
  • Turmeric powder – 1/2 tsp
  • Red chili powder – 1 tsp
  • Pepper powder – 1 tsp
  • Garam Masala – 1 tsp.
  • Coriander powder – ½ tsp.
 
For Coating and Frying:
  • Eggs – 2 nos.
  • Sugar – 1 tsp.
  • Oil – for deep frying.

Method:

Cook the chicken with turmeric powder and salt. Mash them well.

 
Heat oil in a pan, add ginger paste, garlic paste, green chilies and onion, sauté for some time. 
 
 
To this add turmeric powder, red chili powder, pepper powder, garam masala, and coriander powder and salt.
 

Add in cooked chicken to it.


Now the filling for pathiris are ready.



Now lets prepare the dough.
 
 
Roll this balls about 4 inches in diameter.. Prepare 5 to 6 pathiris
 

Place some filling at the centre  of  one pathiri. 



Place another rolled out pathiri over it, gently press the edges together.
 

Then form a pleat around the edge. For preparing pleat, pinch at a point on the edge and gently pull it outwards and fold it back inside and press it in position slightly away from the point you started, that is, the pleat will be at an angle and continue all along the edge.
 
 
Prepare all the pathiris as shown below.
 



Heat oil in a pan and deep fry the stuffed pathiris until it turns golden brown. Flip over and fry the other side too.


Serve hot. Enjoy!!!!!!!!

Chatti Pathiri







Ingredients:

For the Pathiris/chappatis :

Wheat flour – 1 cup.
Salt.
Water.

For the filling:
  • Onion – 4 finelly chopped.
  • Ginger – 1 tsp.
  • Garlic – 1 tsp
  • Green chilies – 2 nos.
  • Salt.
  • Coriander Powder – ½  tsp.
  • Chilly Powder – ½  tsp.
  • Turmeric Powder – ¼ tsp.
  • Garam Masala – ½ tsp.
  • Pepper Powder – ½ tsp.
  • Eggs – 4
  • Chiken – 1 cup boneless, cooked.
  • Oil / Ghee – 1 table spoon.
  • Milk – 1 cup.





Method :

For the Pathiris/ Chappathi:

Mix the flour with water and salt and knead into a dough like that of chappathi. Keep them covered for half an hour.




Roll it out into paper-thin pathiris of uniform size(6 Inches inches diameter).



Prepare the pathiris and keep them aside. 



Chicken masala: 

Heat oil in a pan. Add onion and green chillies and sauté until it turns transparent.


Add in ginger-garlic paste to it.


Now add 1 tsp coriander powder,garam masala powder.



Also add in red chilli powder,and salt to taste.




Add in pepper powder and sauté well with very flame.









Finally add in coriander leaves. 


Mix well and allow to cool.Remove half portion of the masala.



 




Add cooked chicken to it and stir well for 5 mins. 




Now our chiken masala is ready. 




Egg masala;

Pour remaining half of the masala in to a pan. Add 2 eggs to it and beat well.



Now our egg masala is ready.










For the coating and the assembling.

Chicken masala and egg masala are ready.



For coating, beat the remaining eggs and keep aside. Keep milk in  another bowl.



Take on Pathiri and dip it into the milk. 




Again dip into the beaten egg. 



Take a non-stick pan, spread couple of tsps oil or ghee all around(spray the nonstick oil).


Keep  this pathiri as the first layer.


Using a spoon sprinkle the chicken masala filling on top of the pathiri.



Dip the second chappathi in the milk and egg mixture, coat well.



Place it on top of the filling.
     
                                                                                                       
Sprinkle the scrambled egg mixture again and repeat this until all the pathiris and the masala is used up and pathiri being the top layer. 




Pour the remaining egg mixture on top of pathiri so that it drains on all the gaps on sides and form a thin layer on top.



Close the lid and cook it in very low flame 



Flip it over carefully and cook on the other side. 



Yummy Chatti Pathiri is ready to serve.
