Veg Fried Rice - Restaurant Style



Veg Fried Rice - Restaurant Style

Ingredients:


For Rice:

  • 1 cup basmati rice
  • 1.5 to 2 cups water
  • ½ tsp salt or as required
  • 2 to 3 drops of oil


For Fried Rice:


  • 2 cup each of finely chopped vegetables (carrots,peas, french beans, cabbage, capsicum)
  • 3 to 4 small sized garlic chopped 
  • ½ inch ginger, finely chopped (optional)
  • 1.5 to 2 tsp finely chopped coriander leaves
  • 3 tsp soy sauce 
  • 1 tsp vinegar 
  • 1 tsp black pepper powder 
  • 2 to 2.5 tbsp oil 
  • salt as required



Method: 
Cooking the rice:

In a pot, bring to a gentle boil  water with salt and 2 to 3 drops of oil.Add the soaked and drained rice to the hot water.Once it is cooked, keep aside till the rice cools completely.







Preparing the fried rice:


When the rice is cooling, chop the veggies finely and keep aside. remember to chop the french beans very finely. they take more time to cook than other veggies.







Heat oil in a  pan. first add the onion and fry for some seconds or till it becomes transparent.Add the garlic and saute for some seconds. no need to brown the garlic. 






    Then add all the finely chopped veggies. Increase the flame on a high and stir fry the veggies on a high flame.




      The veggies have to be stir fried, till they are almost cooked and yet retain their crunchiness and crispiness.Add the soy sauce, salt ,pepper and vinegar stir quickly


        Then add the rice. stir fry for a few minutes till the sauce has coated the fried rice well. keep a check when adding salt, as soy sauce already has salt in it.





          Finally garnish with coriander leaves.Serve the veg fried rice immediately. 





          Veg Fried Rice-Indian Style




          Veg Fried Rice-Indian Style

          Ingredients :

          • 2 cups long grain rice
          • 1 tbsp. garlic
          • 2 tsps red chilli powder
          • 2 tsps garam masala powder
          • ¾ to 1 tbsp. vinegar
          • 1 bay leaves
          • 1 star anise
          • 1 strand of mace
          • 1 tblsp black pepper powder
          • Salt as needed
              Veggies


              • ¼ cup carrots
              • ¼ cups peas
              • ¼ cup beans
              • 1/4 cup potato




              Method :



              Wash rice till the water runs clear. Soak it for at least 10 mins and cook in lot of water with little oil,  Drain off the rice to a colander. Cool it.

                                          


              Heat a pan with oil on the highest flame, add bay leaves, mace and star anise. 

                                         

              To this add the onion and chopped garlic.


                                        




              Add all the chopped veggies and and add garam masala powder,vinegar and chilli powder(since it is indian style i used these masalas). Fry for a min or two. To make Chinese fried rice,just add soya sauce, vinegar, & salt.






              Add rice and pepper powder. Mix everything well and fry for 2 mins



                                                                

              Fried rice must be made on the highest flame or heat. That lends a smoky flavor to the rice.
