No Bake Strawberry Cheese Cake







Ingredients:
For the crust:


  • Marie Biscuits  - 200 gms / 20 pieces
  • Butter - 100 gms melted


For the strawberry cream cheese layer:

  • Strawberry - 1/2 cup
  • Cream Cheese - 200g
  • Whipping Cream - 250 ml 
  • Powdered Sugar - 200 gms 
  • Vanilla Essence - 2 tsp
  • Agar Agar - 3 tblsp
  • Water - 1/2 cup for melting agar agar
  • Any fruit jam for serving(I used cherry jam)








Method:
Take biscuits in a bowl and crush them with your hands or any machine till they are crumbled. Add in some melted butter and mix well.

 

Place a parchment paper in a  pan.  Transfer the biscuit crumble in the base of this and Press it firmly so it create the base of the cheesecake. Put this in the fridge till you finish making the filling.





Preparing the Filling:

Place the chopped strawberries to a blender and ground to a smooth puree.


 Take cream cheese  and icing sugar in a bowl. Add in Vanila essence to it.




Beat them well with a hand beater.


  
Now add whipping cream to the cream cheese  and beat using a electric beater till they are whipped and firm.


 



Meanwhile boil the agar agar with 1/2 cup of water . Once it completely melted ,switch off the stove.Let it cool but don't allow it to set .


Now the agar agar mixture is ready.


Add the melted agar agar (China grass) to the cream cheese mixture.


Add in strawberry purée to it.


Mix them well.


Now pour the cream mixture over the biscuit base and put back in the fridge for 4 hours or overnight.


 

Have the cheese cake with your favourite jam.
