Butterscotch Cake






Ingredients:
  • Maida / All Purpose Flour - 200 grams 
  • Egg -  2 
  • Sugar - 100 grams
  • Baking soda - 1/2 tsp 
  • Baking powder - 1 tsp 
  • Custard powder - 2 tblsp
  • Salt - a pinch
  • Vanilla essence - 1 tsp
  • Butterscotch essence - 1 tsp
  • Milk - 100 ml 
  • Butter - 75 grams 
  • Butterscotch sauce - 1/2 cup 100 ml (I used homemade; )
  • Buttercream Frosting - 2 cup
  • Chopped Almond For decoration


Method:
Grease the pan with butter and line them with parchment paper or butter paper. If you do not have any butter paper just grease them well and dust some maida over butter. Then tap off the excess flour. Set the pans aside. 

Seive together flour, sugar, baking soda, baking powder, salt, custard powder and set aside. 


Beat butter with powdered sugar until light and fluffy.



Now add the eggs to it and beat until frothy and keep aside. 



In a bowl add 1/2 cup of milk ,vanilla essence and butterscotch essence.. 




Add the egg butter mixture to it.


Then add the flour little by little and stir well so that there are no lumps.



Now add the butterscotch sauce and stir well. 


Then pour it into the lined and greased cake pan.Place inside the preheated oven in the center rack. 


Bake at 170 degrees Celsius for 30 to 40 minutes. Now insert a skewer or a wet knife in the center to see if the cake is done. When done, remove from oven and set aside until it cools down well. 


Invert the cake into a plate. Divide the cake into 2 layers with a help of a knife .Or you can bake 2 cakes in similar sized pans.
Prepare buttercream frosting by beating butter and powdered sugar until light and fluffy.
 


Frosting The Cake
Place one of the layers onto the cake decorating turn table.Add some buttercream over it and spread well with a spatula.

Now place the other cake over it like stacking and press gently.


Then decorate the cake with buttercream.


With a help of a piping cone decorate the sides of the cake. Then I poured butterscotch sauce over the buttercream frosting on the top. Also added chopped almonds over the center of the cake.

  • Mix together flour, sugar, baking soda, baking powder, salt, custard powder and set aside. 
  • Beat butter with powdered sugar until light and fluffy.
  • Now add the egg to it and beat until frothy and keep aside. 
  • In a bowl add milk,vanilla essence and butterscotch essence and stir well. 
  • Add the flour little by little to it  and stir well so that there are no lumps.
  • Now add the butterscotch sauce and stir well. 
  • Then pour it into the lined and greased cake pan.
  • Place inside the preheated oven in the center rack. 
  • Bake at 170 degrees Celsius for 30 to 40 minutes (depends on the size of the cake pans and also changes with every oven, so check after 20 minutes to see if it has risen up and browned as well)  
  • Now insert a skewer or a wet knife in the center to see if the cake is done. If the cake is ready the skewer would come out clean, if you find any batter sticking to it then bake for some more minutes. 
  • When done, remove from oven and set aside until it cools down well. 
  • Then slide a knife around the cake and invert the pan, tap to remove the cake off from the pans. 
  • Divide the cake into 2 layers. 
How I frosted the cake
  • Drop a little buttercream over one of the layer of the cake and spread well with a spatula.
  • Now place the other cake over it like stacking and press gently. Then coat the cake and decorate with buttercream.
  • Then I poured butterscotch sauce over the buttercream frosting on the top. Also added chopped almonds over the center .
  • Serve the cake chilled.
